Thyme Oil Lemon and Honey Dressing

 

We needed a little something to use in our bbq tonight so I made this quick thyme oil which made a lovely fragrant base for a dressing which we used across everything ; to dress leaves, grilled halloumi, to baste a T-bone steak and to bring life to a tomato and burrata salad. Made in minutes it really transformed our supper.

Thyme Infused Oil Ingredients:

Extra virgin olive oil
Fresh lemon thyme
Parred zest of a lemon
Black pepper

Dressing Ingredients:

Thyme infused oil
Honey
Grated lemon zest
Dijon mustard
Ginger and turmeric apple cider vinegar (we found this beautiful one in a local supermarket in Portugal but any good quality apple cider vinegar would do – add a few gratings of ginger if you like)
Salt and pepper

Method:

– Warm 1 cups of olive oil in a pan with 2-3 large branches of thyme, 2-3 pieces of lemon zest parred with a peeler and 1/2 tsp of black peppercorns
– Allow the aromatics to infuse in the warmed oil for around 15 minutes
– Remove the lemon pieces and blitz the herbs into the oil with a hand blender then strain the oil through a sieve discarding the blitzed herb bits
– Use the infused oil to make a dressing with 2-3tbs vinegar, 1-2 tsp mustard, 1-2 tsp honey and some seasoning
– Taste and adjust the flavours – it should be sweet, savoury and aromatic with a little sharpness
– Use to dress whatever salads and bbq meat, fish, cheese you like
