Carrot, Date and Walnut Energy Balls


2 large Carrots
5-6 Medjool dates
2tbs Walnuts
1 cup Oats
1tbs Chia seeds
1-2 tbs Honey
3-4 tbs Nut butter
Sesame seeds, chopped walnuts and coconut flakes for rolling


– Scrub and coarsely grate the carrots
– Chop the walnuts and dates and combine with the carrots
– Blitz the oats and chai seeds to create a flour and all these with the honey and nut butter to the carrots and mix thoroughly
– Chop the additional walnuts and coconut flakes and put them in a bowl with the sesame seeds
– Roll the carrot mixture into walnut sized balls and roll in the nut and seed mix
– Chill before eating to firm up
– Alternatively you can put all the ingredients apart from the nuts//seeds for rolling into a blender and and blitz to a paste before rolling
– Keeps in the fridge for up to 5 days
